Skinny Greek 7-layer Dip

Generally when my girlfriends and I get together for girls’ night, wine and cheese is a hard requirement. Brie, to be more specific. However, going in to the new year I want to make an effort to eat healthier (because let’s be real, I’m not cutting out booze). Regrettably, that means breaking up with cheese and baguettes. Before the girls came over tonight, I was trying to come up with a last minute hors d’oeuvre– something to compliment wine night, but something healthy enough to keep myself on track. It’s too soon to derail from my resolutions, ya know?

The verdict: skinny Greek 7-layer dip.

It’s fresh, clean, and simple enough to whip up on a whim. I like to serve it with warm, fresh pita bread to add some substance when drinking, but the dip is also great with red bell peppers, carrots or cucumbers used as a vehicle.

What You’ll Need

1 container of hummus
1/2 cup of plain Greek yogurt
Mini heirloom tomatoes (chopped)
Cucumber (diced)
Artichoke hearts (chopped)
Kalamata olives (sliced and halved)
Feta Cheese crumbled
Olive oil

Start by spreading the hummus in an even layer across a shallow dish. Follow up with a layer of half of a cup of plain Greek yogurt. Add one layer each of the tomatoes, cucumber, artichoke hearts, Kalamata olives, and feta cheese (in that order). Drizzle with olive oil and fresh lemon juice to taste, chill for 30 minutes, and serve.
