A White Peach & Rose Lemonade Spring Cocktail

I love the springtime, partly because it’s a good excuse to day drink, but mostly because it’s a breath of fresh air after a bone-chilling winter. While we’re still a couple of weeks out from the official spring season, I’m ready to retire my cold-weather cocktails for something light and refreshing. Specifically for the spring season, I love the idea of combining fresh fruit and pretty florals for an insta-worthy cocktail. So, I did just that.
With inspiration from Pinterest, and twenty minutes walking aimlessly around the fruit aisle at the grocery store, I made a white peach and rose lemonade cocktail.
I partnered with Green Hope Vodka for this pretty drank. Green Hope is a non-GMO, organic, gluten-free booze made in small batches right here in sunny California. It’s crisp, clean and goes down way smoother than your typical vod. Now, let’s get mixin’.
What You’ll Need
3 cups white peaches, chopped into pieces
1 1/2 cups water
1 cup fresh-squeezed lemon juice
3/4 cup sugar
4 tablespoons rose water
Vodka (I use Green Hope’s organic vodka)
Soda water
Pink rose petals to garnish
Put the chopped peaches, water and sugar in a sauce pan and cook over medium heat for 15-25 minutes.  Allow the peachy mixture to cool, and then run it through the blender until it’s completely pureed. Set in the fridge to chill.
While the peach puree is chillin’ (literally), squeeze your lemon juice in to a pitcher. Combine the lemon juice, rose water and peach juice and pour in to a shaker with ice and two ounces (or more, no judgement) of your preferred vodka.
Shake, serve and top with fresh rose petals and a splash of soda water for you and your best gal pals.
